The reign of the Voltaggio brothers continues with Chef Bryan's triumphant warm cured trout. The entire dish, including the deconstructed bearnaise by Mike I., was a hit with the judges, but they were especially impressed by the trout itself.
The judges, including Daniel Boloud, commented that the seemingly simple preparation actually required a great deal of skill and work, and dinner guest (and Chef of the Century) Joel Robuchon said, very simply, "I like it a lot."
