Top Chef News, Shoes, and Shows

Zac Young of Just Desserts 1 at the James Beard Foundation annual gala and auction: “I promised if the bidding went high enough, I'd cook in Gail's shoes. It did and La Simmons handed over the goods.”

We mentioned yesterday that we spotted TC: Texas contestant Nyesha Arrington on last Sunday’s “sneak peak” at the new Food Network show, Chef Hunters. Now comes word TC Masters Mary Sue Milliken and Susan Feniger will be looking to hire an executive chef for their restaurant Border Grill on the show’s official premiere this Thursday night at 10:00 Eastern.

And if that’s not enough, there’s a 1980s-era sit-com in the works based on Too Hot Tamales Mary Sue and Susan’s long-standing friendship and business partnership (and there's that husband they have in common . . .)

Missing Anthony Bourdain as a judge on the new season of Top Chef? Never fear. His new show, The Layover, premieres on the Travel Channel Monday, Nov. 21. Click here for video of his segment this week on Letterman, where he explains how The Layover is different from No Reservations, and why “the smell of failure is French toast.”

Bourdain will also make an appearance, as it were, on The Simpsons this Sunday (Nov. 13 at 8:00 Eastern on Fox), in which Marge becomes, yes, a food blogger. Grub Street has a great interview with the show’s executive producer about the episode (don’t miss the slideshow).

TC News and Information 1.25.11

Top Chef Masters 3 begins filming next week! So says Curtis Stone, recently announced replacement TCM host for Kelly Choi, in this interview with Slashfood. Eater speculates Top Chef Masters 3 will be filmed in LA once again. I dunno. If Bravo is really looking to change things up, a change of location might be in order. Of course, the Masters don't have to sleep in "bunky beds" or be quarantined after they're auf'd. So we'll have to watch what happens.

When Curtis Stone was asked whether he's glad he's hosting rather than competing in Top Chef Masters, he said: "I've just been going through all of the challenges and I'm so glad that I'm not going to have to do them myself -- they're tough challenges. But these guys are brilliant chefs. And as much as it's difficult -- you'll see them stand there shaking their head because they're angry at the challenge -- but they'll still go make great food. I think my role is to sort of empathize with the chefs since I appreciate the technical skill. Food writers just can't."

While it's not surprising the Top Chef Masters 3 cast is already in place, here's an update on that casting call for Top Chef 9 and Just Desserts 2:  Hopefuls can email the Magical Elves directly. Methinks Padma's gonna have some quiet time with her new kidlet before we see her on the Bravo airwaves anytime soon after Top Chef All-Stars concludes.

Last week's Restaurant Wars introduced viewers across the country to the concept of pop-ups. TC: Just Desserts' Zac Young of Flex Mussels is doing a two-week donut pop-up in NYC's Grand Central Station featuring "salted cajeta (goat's milk caramel), raspberry, spiced chocolate, cinnamon sugar, and two more changing options." Don't you wish your commute included donuts like these?

Just Desserts' finalist Danielle Keene has a new gig at L.A. Creamery, where she will be rolling out ice creams like "Hot Chocolate flavored with chili powder, cinnamon, vanilla bean and cocoa nibs, Milk Chocolate Chai flavored with black tea and seven spices, Sassafras flavored with sassafras bark, Honeycomb ice cream layered with handmade honeycomb seafoam candy, Roasted Banana made with fresh bananas roasted with brown sugar and butter until caramelized, then blended in a lightly flavored rum base, and a non-dairy Chocolate Sorbet made with bittersweet chocolate, sugar and water."

Got a hankering for a more back-to-basics dessert that even Sylvia Weinstock would love? Just Desserts' Erika Davis and her "Ultimate Cookie Dough Company" website are now up and running, with cookie dough you can receive in the mail and bake yourself: Oatmeal Walnut Raisins, Chocolate Chip Walnut, Peanut Butter Cookie, Chocolate Chocolate Chip, White Chocolate Chip Macadamia Nut, and Thousand Dollar Chocolate Chip Cookie. I'm thinking that if a tub of any of them arrived in my mailbox, I'd probably sit down and demolish them with a spoon before they ever hit the oven :) You can read more about Erika's Culinary Wonders USA and her scholarship efforts here.

Congrats to Top Chef: Just Desserts for being nominated for a GLAAD award in the "Outstanding Reality Program" category!

Need a red-carpet fix? Here's video of Fabio Viviani and his business partner at the Tasty Awards.

Meanwhile, there is no new episode of Top Chef All-Stars this week, so adjust your DVRs and expectations accordingly.

If you need some comfort food of the savory variety to get you through a chilly week without a new episode, how about a nice gooey grilled cheese from Dale Levitski's Chicago restaurant, Sprout?

TC News and Information 11.22.10

The Chicago Tribune has done the math, so you don't have to. Check out their Top Chef Power Index, where S + Q – EB + EW + ET = TCPR. If you prefer word problems, this translates as (Staying power) + (Quickfire wins) – (number of times in the elimination bottom group) + (number of times in the elimination top group) + (elimination wins) = “Top Chef” Power Rating. Hmmm, this could come in handy if you want to pick your fantasy team on Fafarazzi for the All-Stars.

Meanwhile, Season 6 Top Chef winner Michael Voltaggio has announced he'll open his own restaurant, "Ink." in a space formerly occupied by a sushi restaurant in West L.A., hopefully by the end of February. Yes, tats had something to do with the name. Click here for more info about his plans for a non-Japanese "omakase-style" menu, mixing casual and fine dining, and creating a place where "even the servers are running in to work every day excited to be here."

Want to know what's on the wish list of MVolt's brother, Season 6 finalist Bryan? Investors for a green hotel in Frederick, Maryland, that would include a bunch of his restaurants. And, oh, yeah, astronaut ice cream and a $10K freeze dryer.

TC Just Desserts' Zac Young tells DessertBuzz he'll be opening a donut shop in conjunction with his current employer, Flex Mussels.

And Just Desserts winner, Yigit Pura, tells SF Weekly he'd like to open a "high end concept dessert shop" in San Francisco with his TCJD winnings.

Need some Thanksgiving tips or inspiration? Season 6 finalist Kevin Gillespie demos an oil-less turkey fryer in this video. And Wal-Mart has teamed up with returning All-Star Carla Hall to provide organizational and money-saving tips, along with Carla's recipe for a Sweet Potato Casserole with Wheat Chex and sage crumble.

Finally, remember that Quick-Fire Viewer contest Bravo ran for TCJD? You can find the winner and her recipe for Key Lime Lollies here.

All Top Chef Interview with Zac Young

Top Chef Just Desserts contestant Zac Young, talks about his experience on the Bravo Show.

A highlight: Yigit recently made the cake for Zac's sister's baby shower!

Thank you Chef Zac!

ATC Love to Chef Zac Young

Another member of Team Go Diva takes the fall this week when Zac Young's blue-iced layer cake is not a favorite of cake queen Sylvia Weinstock and the rest of the judges. Last week, Zac won the Elimination Challenge with his clever tea party cakes, so it was surprising to see how far off-course he went this time around.

Though the cake lost points for unattractiveness, the judges praised its multi-level moistness. Unfortunately, moistness wasn't enough.

All Top Chef is sorry to see that Zac did not make it to the final three, but he is still a winner in our eyes nonetheless.

This post is for positive comments about Chef Young. If you have anything negative to say about him or his competition, please do so here.

Congratulations, Chef Zac Young

Well - finally!

Zac Young has been dazzling us with his creativity all season, so it's about time that he wins an Elimination Challenge. His delightful desserts representing Julie Andrews and husband Blake Edwards charmed the judges and showed a lot of ingenuity. Plus, they were the right size for a "tea party."

Only four pastrycheftestants are left - will Zac win it all? Only one way to find out.

This post is only for positive comments about Chef Young. If you have anything negative to say about him or his   competitors, please do so here.

Meet the Pastry Chefs - Zac Young

AGE: 27
HOMETOWN: Portland, Maine – currently resides in New York, N.Y.
PROFESSION: Executive Pastry Chef, Flex Mussels
CULINARY EDUCATION: A.O.S. Baking and Pastry Arts, Institute of Culinary Education
FAVORITE SIMPLE FALL DESSERT RECIPE: "Upside-Down" Apple Crisp with Creme Fraiche Ice Cream.

While employed in the wig department of the Radio City Rockettes, Zac Young had an epiphany: he would rather be baking cookies than fluffing Santa beards. Born to a vegan mother, Zac never had chocolate mousse, but knew all too well the flavor of a tofu and carob pudding. After graduating with honors from the baking and pastry arts program at the Institute of Culinary Education, Zac went straight to the top, working under Sebastian Rouxel and Richard Capizzi at Bouchon Bakery. In 2006 he was offered a position of Pastry Chef at the New York City hot-spot Butter Restaurant. While there, Zac developed his signature style, using classic French technique, bold flavors, and fun to put a creative twist on American desserts. Always hungry for more, he trained in France with such renowned chefs as Philippe Givre at Valrhona and Philippe Parc at Chocolate Michel Cluizel. In 2009, Zac moved uptown to the bustling bivalve mecca Flex Mussels. His whimsical creations caught the fancy of New York Times’ Restaurant Critic Frank Bruni, causing him to exclaim, “how lucky of us to find room for dessert” in his review of Flex. In his free time, he can be seen making dresses out of chocolate for the opening night of the International Chocolate Show. His mother is proud, even though his desserts are not vegan.
