New Gigs from Top Chefs Bryan Voltaggio, Stephen Asprinio, and Hosea Rosenberg and Marcel Vigneron Goes Japanese

Season 1 wine guy and aspiring restaurateur Stephen Asprinio has his sights set on world domination with his "smart casual" Pizza Vinoteca, featuring iPad ordering, root beer made by his father, and, of course, wine - a concept he hopes to expand nationwide after launching in NYC in the spring.

Season 5 winner Hosea Rosenberg is eyeing Denver locations for his next project, Blackbelly, according to Eater Denver.

On the heels of his brand spanking new eatery, Lunchbox, which we reported about on Tuesday, Bryan Voltaggio reveals details of his next new Frederick, MD restaurant to the Washingtonian, an affordable diner-style concept offering healthy fare and housed in a remodeled car dealership.

Voltaggio brother Michael also gets some serious ink from LA Times restaurant reviewer S. Irene Virbila in her LA Times review of his first solo gig.

And Marcel Vigneron keeps doing his Marcel thing, this time merging his "molecular gastronomy" proclivities for a sushi bar pop-up. Check out possible menu items from Grub Street LA here.

TC News and Information 8.7.11 - Happy Anniversary to the Magical Elves!

Variety spotlights the production company behind Top Chef as the Magical Elves turn 10! Take a trip down memory lane here. And read more about upcoming Top Chef Season 9 here, where a Bravo exec discloses “We started things a little differently with more chefs. A big challenge for us after ‘All Stars’ is to make everything seem big again and I think we've succeeded. The challenges are inventive, there are a lot of special guests and there will be a traveling element, which is new.”

Meanwhile, Top Chef Masters has been renewed for a 4th season and the Elves are casting a new Bravo series, ‘Around the World in Eighty Plates,’ which “will follow up-and-coming chefs as they travel to various cities around the world to compete in culinary challenges. Contestants will have to learn the local cuisine, culture and customs so that they can best reinvent the menu at world-renowned restaurants,” according to TV Guide.

In other news, check out this New York Times item about head judge Tom Colicchio’s “secret farm” next his new Riverpark restaurant. (Take that, Elia.)

Top Chef Masters judge/former Gourmet editor/food memoirist Ruth Reichl is penning a new novel “set in World War II and the present.” It may involve food.

TC Season 2 and All-Stars contestant Marcel Vigneron is doing low-tech street tacos for The Gap.

We hear Season 6 finalist and Fan Favorite Kevin Gillespie won the Celebrity Chef Cookoff at this weekend’s Gig Harbor Wine and Food Festival in Washington State. Don’t miss this great video interview with the Bearded One filmed prior to the event. Turns out this Atlanta boy used to cook in the Pacific Northwest.

TC All-Star Dale Levitski and the team from his Chicago restaurant Sprout (which includes his Season 3 co-contestant and bff Sara Nguyen) were invited to cook at the James Beard House in NYC. Don’t miss the photos of their feast from Feast.

Season 3’s Camille Becerra’s newest gig is as a culinary producer of “pop-up” dinners in Manhattan. The Daily Meal explains.

Season 4’s Nikki Cascone is in on the culinary producer action as well, with “Southampton Supper Under the Stars” August 27, where she’ll be joined by TC contestants Manuel Trevino and Angelo Sosa, and a Bravo Housewife (or three?).

And reaching into the “way-back machine,” we’re glad to see Cynthia Sestito (who elected to leave at the beginning of the first Season of Top Chef due to her father’s illness) is out and about and picnicking with panache. Check out these photos from a recent Grey Goose event in the Hamptons.

Only two weeks and change until Top Chef returns to Wednesday nights, with Season 2 of Top Chef: Just Desserts! I’m especially excited because one of the contestants, Megan Ketover, is from my city (Cincinnati) and I have Downtown Restaurant Week reservations to taste her food! Anyone else have a hometown contestant to root for?

Marcel's Quantum Kitchen Giveaway

Have you been watching Marcel's Quantum Kitchen on Syfy?
The liquid nitrogen-toting Marcel Vigneron has a lot to prove -- his reputation in the restaurant world is that of a seasoned molecular gastronomy chef extraordinaire, but he is still known to scores of Top Chef fans as a young and talented chef with an oversized ego. While executing complicated experiments and ideas in the kitchen, Marcel is stoic and demands to be in charge. But he is also surprisingly fun and engaging when outside the kitchen, taking his clients’ requests and dreams for a spectacular experience to heart. His passion for food is unparalleled. He’s an ingénue and food perfectionist who struggles with the belief that he just may be too big for his current kitchen.

In other words - Marcel's a pretty damn creative guy. We like to think his fans are, too, and we have a fantabulous prize to give away to one of them, and the winning can't be easier. Just answer this simple question:

What's the most creative dish you've ever made?

So what's the prize? It's a cooking kit that includes: a canvas tote bag; herb garden set; herb seeds (parsley, Oregano, basil); shell digital scale; bamboo cutting board; kitchen utensils (whisk, spatula, spoon); oil/vinegar bottle; salt & pepper shakers; branded Moleskine recipe journal; and an apron.

So what are you waiting for? Leave your answer to the question in a comment. Oh, and don't forget to read the official rules, below.

Official Rules:
  • Contest open to US residents 18 years of age or older only.
  • Winner will be chosen at random from all entries received.
  • The odds of winning are dependent on the number of entries
  • Entries must be received by midnight, April 26th, 2011.
  • Winner will be notified by email. Please provide a valid e-mail address; if you'd prefer not to leave a comment, you may e-mail your entry to us at alltopchef@gmail.com
  • All Top Chef is not affiliated with Mission Control Media or the Syfy network in any way.

Don't forget, a new episode of Marcel's Quantum Kitchen airs tonight!

TC News and Information 3.22.11

As we reported previously (and other sources have reiterated), this season's "finale" runs four weeks. So don't let the name of tomorrow night's episode, "Last Supper," fool you. The final installment of the finale airs March 30. The All-Stars Reunion airs April 6 in the usual 10:00 p.m. Eastern time-slot, followed by the premiere of Top Chef Masters Season 3 at 11:00. Fan Favorite will be revealed on "Watch What Happens" March 31, according to host Andy Cohen on Sunday night's WWH, which featured Carla Hall. OK, I get it that the reunion show was filmed before Fan Fave voting was completed. But I'm still bummed Bravo chose not to figure out a way to announce Fan Fave winner within the context/time-slot of the reunion show. I'm hoping for a Housewives-free "Watch What Happens" March 31 following the actual All-Stars finale, but who knows.

In case you missed Carla Sunday night on WWH, here's a brief clip via Eater without Housewife interruption.

Meanwhile, this year's Top Chef Tour dates and cities have been announced. Details on these tours have been notoriously sketchy in the past, but I'm hoping they may be getting their act together as they take it on the road this year - especially since the schedule includes two cities in my metropolitan area and rumor has it that Richard Blais may be here . . . If you hear of details in your city, please email us and we'll be happy to share!

On to Monday's announcements about the 2011 James Beard Awards, where Top Chef Season 7 is in the running in the "Television Program, In Studio or Fixed Location" category - hmmm. Making the short list in the Chef and Restaurant section are TC winner Stephanie Izard for her Girl and The Goat as Best New Restaurant, and upcoming Top Chef Masters Season 3 contestant Sue Zemanick for Rising Star Chef of the Year (her third nomination in that category). Naomi Pomeroy, another Top Chef Masters S3 contestant, prepared "Cattail Creek poached lamb pastry with pickled sour cherry and spring herb salsa verde" for the pre-announcement James Beard event in Portland, OR, according to this.

If you haven't read this juicy interview with Tom Collichio from AV Club, check it out now. It includes some hints about the reunion.

Dale Levitski launched what some have called a "no-kids" brunch at his Chicago restaurant, Sprout, last weekend. (He says he just doesn't offer a kids menu.) Chicago Time-Out's coverage here, and Huffington post has more - including photos - here. Lingonberry French Toast or Foie Gras Deviled Eggs, anyone?

TC News and Information 1.31.11 - Insiders' Edition

First off, if you haven’t already read this first-hand account of dining at both RW teams’ restaurants from blogger The Good Life Gourmet, check it out right now. She ultimately voted for Team Etch, but struggled with her decision, as did her tablemates.

And if you hated the name “Etch,” did you know that at one point Marcel wanted to call his team’s restaurant “Marcel”? So says Collichio in the Bravo’s extended judges table clip.

I’ve read comments elsewhere about how difficult the outdoor Restaurant Wars shoot could have been had the weather not cooperated. But when Gail Simmons mentioned in her EW blog that RW would take place where she was married, I did some googling. The Foundry has a mix of indoor and outdoor spaces – and indoor spaces that look like they’re outdoors (see photo below), plus tents available for rent. The Foundry’s website touts its availability for weddings, film, video, and photo shoots, parties and special events, and seminars. So methinks the cheftestants were never going to be cooking in the rain. More to the point, Padma and the diners would not be eating in the rain. If you’re curiosity is piqued about Gail’s wedding (complete with eco-friendly foodie touches), you can find photos via Martha Stewart here.

Meanwhile, Dale Talde of Team Bodega apologizes to the RW servers on his blog and shares this: “I've been getting a lot of questions about why I picked the team the way I did. It is really simple. I was positive that picking Marcel as the team leader would drown what ever team he picked. In speaking with Marcel after in the stew room, I asked him why he picked Angelo first. His response was that he wanted to keep Angelo off my team, and to me that is just a really weird way to go about picking your first chef. When I picked Fabio, it was like picking Micheal Jordan 3rd overall of the draft. Steal of the draft. Getting Richie was Blake Griffin, obvious number 1, Tre was Dwigth Howard, solid in the post, and Carla is Phil Jackson, Zen master."

Fabio Viviani of Team Bodega is now blogging the All-Stars, and his RW recap is a hoot. Fabio's take on Dale selecting Marcel to lead the opposing team: “Tiffany, Angelo, Mike, Antonia are GREAT chefs, as Marcel is…… but Dale just handed a 600Hp Lamborghini in the hands of a teenager !! He will kill himself eventually.” On other matters of strategy: “Our food is playful, simple and easy to plate….Their food is complex, hard to pla[te] and too technical.” On the other team’s food: “I tried Antonia dish, although the sauce is little salty the Gnudi of ricotta are really good, Mike Isabella has a winner dish, i love octopus and pork belly is great….. I actually liked most of their dishes, beside awful eggs pickled in salt and sugar, really ?? and Marcel stoner dessert— I found their food decent…” Fabio’s assessment of his own performance: “Dana Cowin editor of Food & Wine Magazine is there, the judges are there too and I’m taking care the floor like a Mamma Bear would take care of his little newborn Cub. . . . We WON !!!! Fabio take the Princess-Service-Front-Of-The-House Home as I’m producing also a kick ass dessert as well, all the rest of the dishes are complimented the whole time at Judges Table !! Richard Blais get the prize, the glory and 10K …. am I happy for him ?? Yes…. am I disappointed that I wasn’t the one that won ?? Yes…. No one ever want to do the front of the house and no one ever want to do dessert in RESTAURANT WARS…. I’ve done both in an excellent way, maybe this time I should’ve get a little prize…”

You can hear more from the inimitable Fabio on WGN’s Nick Digilio weekly podcast with the “Maestro” here. Fabio is certainly fired up for this week’s Italian challenge! And if you want to learn how to make gnocchi (what else?) from Viviani, here’s a Ustream video of a class he recently offered at one of his restaurants.

Tre Wilcox describes Marcel as someone who proved to be a sore loser whenever he didn't win, in this video with Good Morning Texas, where he also talks about his new restaurant, Marquee, set to open in March.

Eli Kirshtein weighs in about RW on his Bravo blog: “Amongst Top Chef contestants there has long been a dispute about which you are actually cooking for. Some will say that it is the guests who are being fed during the challenges; others will say it is the judges. I know what a lot of you will say, but they are not even close to the same thing. If I had a dime for every time I heard a chef who was on the bottom or even went home say that all of the guests said theirs was the favorite, while the eventual winners was repulsive, I would be rich man. Unfortunately there is a major disconnect between these two camps often times. A chef on the show has done a transcending job when they appease both groups, but it is rare, much rarer than the edit of the show might tell you. . . . It seemed one of the biggest advantages was the wit and tact that the whole team at Bodega had. I think the best restaurant [w]on this day.”

Tiffany Derry, Marcel’s teammate and RW FOH, shares the news that she has a new gig as Executive Chef of the upcoming Private Social restaurant in Dallas with Open Table and offers assessments of some of her fellow All-Stars: “Angelo was made to look like he was a saboteur, but he really was trying to help. Marcel is okay outside of kitchen, but in charge in the kitchen? Not so much. . . . I personally was impressed with Dale Talde. He cooked with soul and his imagination surprised me.”

Marcel himself, of course, made the media rounds after being PYKAG’d, taking issue in many of them with the way he was portrayed, as in this interview with the Chicago Tribune – where he says he is not allowed to talk about the editing, but kind of goes on to do so. More here from The Feast, where Marcel says he’s looking to open a new restaurant in Greater LA within the next year and has already secured the funds to do so. “It'll be modern global cuisine, casual, 60 seats, totally affordable yet elegant dishes. Shared plates primarily, reinvented classics. I'm scouting locations now.”

As for that disparity between “off-screen Marcel” and “in-the-kitchen-on-Top-Chef Marcel”? See what Mike Isabella, Carla Hall, and Richard Blais have to say in this Bravo bonus clip.

Recently auf’d All-Star Casey Thompson blogs about the RW episode here: “Put up a “pop-up” restaurant in 3 hours. COME ON! Then, I like this touch, they bring in an “expert” chef that has been doing these sort of “pop-up” restaurants for years now. Please, everybody, quiet now…listen to this chef tell you how he has been doing this and how it should work. Never mind how he probably planned this “pop-up” restaurant for 6 months before launching the concept.” And her take on the outcome: “The lesson to take away from this week’s chefs…the food doen’t have to be over the top but it must be on point. Finally, we have lowered the bar. Thank you Restaurant Wars for showing all of us the way it should be done or more importanly, the way our guests really want to eat.”

Season 4’s Ryan Scott, who’s commenting on the All-Stars for Yum Sugar, agrees: “I love, love, love team Bodega's concept of simple comfort food, starting with a bag of potato chips. I'm telling you, this is what it's all about. Last week I featured mac and cheese Spring rolls on my catering truck, along with peanut butter and jelly cupcakes. Needless to say, they sold out entirely. It's all about the comfort foods, guys. This is the way it has been for a while and will always be. . . . Which brings me to my next question: Oxtail, monkfish, octopus, and crudo?? What the *&$% are you guys thinking? . . . Back to simplicity, I have to disagree with Antonia that "elevated" food outdoes tuna in a can. It's strictly about execution. And the Bodega team seems to really carry the innovation in this challenge.”

So . . . we finally get a new episode Wednesday, filmed at Rao’s. Do you think Fabio will take it? What about Antonia or Mikey? Will Blais do a twist on gnocchi? Will Tre finally come out of the shadows? And what of Carla, Dale, Angelo and Tiffany?

P.S. Yigit Pura of Top Chef: Just Desserts says he'll make a live cameo appearance on Bravo tonight . . .

All Top Chef Interview with Marcel Vigneron

Bravo Exit Interview - Marcel Vigneron

Thursday, December 9, 2010

Congratulations, Richard Blais, Angelo Sosa, and Marcel Vigneron

Given that Richard, Angelo, and Marcel all made it to the final three in their respective seasons, it should be no surprise that they would put together a winning dish. The fact that three powerhouse chefs could end up working on one dish shows the embarrassment of riches this season has in terms of culinary talent.

Their Banana Parfait was chosen over the wide selection of dishes produced by Team Brontosaurus on the American Museum of Natural History Challenge. Although many would have thought that Team T-Rex had the advantage of working with meat, eggs, and dairy, their team pulled out its collective creativity and brought home the win. We look forward to seeing what all three of them can do in future episodes, both in team challenges and individually.

This post is only for postitive comments about Angelo, Marcel, and Richard. If you have anything negative to say about them or their competition, please do so here.

Meet the All Stars - Marcel Vigneron

One of the most controversial cheftestants in Top Chef history (and the reason our Senior Editor Monica Reyhani became obsessed with the show in the first place), Marcel is probably most known for his passion for molecular gastronomy and, um, rapping. Marcel went all the way to the finale, losing to Ilan Hall in Hawaii.

Marcel considers himself to be first and foremost a “cook.” He previously worked as a Sous Chef at The Bazaar by Jose Andres, as a Master Cook at Joel Robuchon, and as a line cook for Michael Mina at Aqua before becoming an Executive Chef of his own kitchen in Los Angeles. He also has his own TV series titled “Marcel’s Quantum Kitchen” which is slated to premiere on Syfy in 2011. Marcel is a curious cook who has an affinity for culinary knowledge, who uses a knife as an extension of his hand, the kitchen as an arena, the earth as a grocery store, the tasting menu as his bio, and the plate as a porcelain canvas in which to display his art.

TC News and Information 10.26.10

We're sorry to hear those rumors of Season 3 winner Hung Huynh's "culinary overlordship" were premature.

Meanwhile, Season 4 finalist and returning All-Star Richard Blais has apparently leaked his own rumors that his next restaurant will be in the Virginia Highlands area of Atlanta and move on to a new concept other beyond boutique burgers. But you can catch a blogger's eye view of his newest Flip burger joint, which opened last week, here.

TC judge Tom Colicchio is also saying he won't open any more Crafts, in a "branding = good, chain = not so much" strategy.

While Season 7 winner Kevin Sbraga hasn't yet released specifics about the restaurant he plans to open with all that TC cash (ya know, like name, location, or date), he is doing a preview dinner of its menu December 9, according to this item.

Season 1 finalist and returning All-Star Tiffani Faison got a little love recently from the Boston Globe, which said: "It's time we stop calling her 'Tiffani from Top Chef' . . . she deserves simply to be known as the killer chef she is." For more, click here scroll down to the item on her restaurant, Rocco.

Another returning All-Star, Season 6's Jennifer Carroll, has persuaded mentor Eric Ripert to let her make some changes to the menu at 10 Arts, including branching out from seafood and focusing on more seasonal and locally sourced dishes.

Season 6 finalist Bryan Voltaggio talks about turning down All-Stars, and being mistaken for his brother, in this extended interview.

Season 2 finalist and returning All-Star Marcel Vigneron promoted his new SyFy show, Marcel's Quantum Kitchen, at a recent press gig, making a Harry Potter-inspired "butterbeer" with the use of spherification-ized cream soda. You can read a report and catch a couple videos of his demos here.

And Season 3's Brian Malarkey, who as far as we know was not given the opportunity to turn down All-Stars, has his own new show, Kick Off Cook Off, on TLC. Click here for a piece in which he describes himself as the "poor man's Tom Colicchio," plus video snippet.

Wondering why a few of your favorite "also-rans" won't be competing in the All-Star season of Top Chef? Season 6 finalist and Fan Favorite Kevin Gillespie speaks out here.

Great profile of Gail Simmons and her evolution on the Top Chef franchise here.

Looking for food with a view? Check out this article and slideshow about Tom Collichio's new NYC restaurant, Riverpark.

Meanwhile, All-Star contestant Mike Isabella is opening a new restaurant, with fellow Season 6 chef Bryan Voltaggio as an investor, according to this item.

And if you're wondering what All-Star competitor Marcel Vigneron from Season 2 is up to these days (or are just a fan of venison and carpaccio, as I am), check out this blog post - with great photos - of a meal he recently helped prepare.

Finally, although I think we're all glad Anthony Bourdain will be a permanent guest just on the upcoming All-Star season of Top Chef, apparently his wife is thankful he turned down an offer to appear on another reality competition show. Still, her comment got the folks at eater.com imagining what might have been. Check out their gallery of hilarious Bourdain - Dancing With the Stars mash-ups here. Just try not to spit coffee onto your keyboard like I did.

Marcel on TV

Marcel Vigneron is getting his own show, appropriately on the SyFy network.

"Utilizing the science of cooking, Marcel's Quantum Kitchen stars one of America's most notorious chefs, molecular gastronomist Marcel Vigneron (Top Chef). In each episode, Marcel and his new catering and event company will be hired by a demanding client to produce an extraordinary celebration or event. Based on the client's requests, Marcel will dream up a theme and cuisine for the event, which range from a fairytale graduation party and a Goth-rock fashion show to a ribbon-cutting ceremony for a new subway line. He and his team of party planners and chefs will tap the depths of their imagination and culinary talents to create everything from the immersive dcor to a delicious menu that emphasizes Marcel's unique brand of avant-garde cooking."

Apparently he's notorious. Who knew?
